DIY Ice Cream Sandwiches

Ingredients
1 cup Heinen's semi-sweet mini chocolate chips
1 container Heinen's all butter chocolate chip cookies
1 tub Heinen's Neapolitan ice cream
Directions
  1. Pour the mini chocolate chips into a shallow bowl and set aside.
  2. Flip a cookie over on a plate and place a generous scoop of ice cream on top. This can be strawberry, chocolate, vanilla or a combination of all three! Use an ice cream scoop to gently spread the ice cream to the edges.
  3. Sandwich a cookie on top and gently press both cookies together.
  4. Roll the sides of the sandwich in the mini chocolate chips until the ice cream is completely coated.
  5. Set on a plate in the freezer and repeat with the remaining chocolate chip cookies.
  6. Serve immediately and enjoy! Freeze leftover cookie sandwiches in a freezer-safe bag for up to 3 months.
